They're all the same language. There are some pronunciation differences, but from a written point of view they're all identical.
We have alot of scripts in Aramaic, and you'll find in Aramaic documents that often people use multiple Aramaic Scripts on the same document.
Most common is to see Estrangelo, Serto, and East Script in the same document.
So what you hear would be the same as that found in the time of Christ.
